Apple Cider Vinaigrette

This recipe is for the vinaigrette that we use to dress one of our customer-favorite salads: Boston Bibb Lettuce with Sliced Gala Apples, Vermont Cheddar, Spiced Pecans and Dried Cranberries.† You’ll notice that the recipe includes a little fresh apple cider that gives the vinaigrette a touch of sweetness.

Chef’s Note:† this recipe is restaurant-size — you’ll need to do a little math to scale it down for home use!

Apple cider vinaigrette

1 1/4C††† cider vinegar
1/2C††† fresh apple cider
4††† shallots, sliced thin
1T††† grainy mustard
1t††† fresh thyme leaf
1C††† good olive oil
2C††† canola oil
kosher salt and ground black pepper

In a mixing bowl, stir together with a whisk all of the ingredients to make a simple vinaigrette.† Double-check the seasoning.
